Blackcurrant Leaf Ice

1 pint water

3 or 4 handfuls black currant leaves

3/4 cup sugar

few drops of green food coloring

rind of 2 lemons

juice of three lemons

Put water & sugar in saucepan.  Dissolve completely.  Boil for six minutes then add  leaves.  Allow to infuse off the fire until well-flavoured.  Drain and extract all the syrup.  Add lemon rind & juice.  Add colouring a drop at a time, until mixture is pale green.  Freeze, stirring occasionally.
